well, i should mention that the cake, pie and stuffed peppers were all for a party, so i set aside some time for this as a special occasion... plus, 2 of those 3 things i didn't cook by myself (props are due to tsveti, too, for the pie and the peppers). the salad i made on saturday morning while catching up on back daily show episodes and it took me all of 20 minutes to make from start to finish, most of which was boiling time for the potatoes anyway. :)

@ana: ok, the recipe is very very easy:

1. the cake: first, heat up the oven to about 175C (medium on most stoves). mix together 3 cups flour, 2 cups sugar, 1/2 cup cocoa powder, 2 teaspoons baking soda [bicarbonat], 1/2 teaspoon salt. then in this mixture make three holes into which pour, separately, 3/4 cup vegetable oil, 2 tablespoons white vinegar and 2 teaspoons vanilla and/or rum essence. cover this with 2 cups cold water and mix quickly until it's just getting homogenous, then put in a pan and bake in the oven for about 1/2 hour.

2. the cream: for this particular cake i made it using: 1 cup very firm tofu and 1 cup soy vanilla pudding, blended together with 1 cup fresh raspberries and several teaspoons raspberry jam for added color/taste/consistency, about 1/3 cup sugar and vanilla and rum essence (to taste). you can also just use tofu, and you need either a blender or an electric mixer for this. [careful, the tofu needs to not be already salty - in romania, many kinds are too salty for this kind of thing. if you can't find unsalted tofu, you'll have to make some other kind of cream, there's many possibilities.] i also added some shredded coconut, but that's entirely optional.

to assemble everything together, let the cake cool down and then cut it horizontally into 2 layers. spread some cream in between the 2 layers and then cover the entier thing with the rest, and decorate with chocolate shavings, raspberries, raspberry sauce etc..

the cake is actually quite forgiving, and you can play around with the ingredients a lot, add more things (such as ground nuts to the cake layers and just about anything you'd like to the cream - you can make chocolate cream by melting chocolate and adding it in and if needed thinning with some maple syrup or even water and/or oil)... for this one, i actually didn't have enough regular flour so i used some rough-ground wholewheat flour - and it still turned out ok, though the texture was a bit unusual.
